Nakano BC is an award-winning producer of sake, umeshu (plum wine) and spirits, based in Wakayama, Japan.
Nakano's Head Sake Brewer (Mr Hirofumi Takeda) specialises in producing clean sake, packed with umami. Under his guidance, Nakano BC produces a range of sake, from full-bodied sake, which is more typical for Wakayama (and matches the local cuisine), to drier sake more typical of the Ishikawa school where the Head Brewer trained (but still full of umami).
Wakayama is the #1 region in Japan for producing ume fruit. In fact, "Wakayama Umeshu" is a protected brand: to be called this, it must meet minimum fruit to liquid ratios and production methods. All of Nakano's umeshu are made using fresh ume, which local farmers deliver to the brewery on the same day they are harvested.
The product range also includes chu-hai (Japanese sours), craft gin and non-alcoholic ume concentrate.
